The girls from the Zweischwestern Backstube in Kempten (Instagram @zweischwestern.backstube) were inspired by our Eelina series and created a wonderful, fresh and fruity lemon tiramisu . Not only does it look delicious in our large bowl, it also smells and tastes delicious. Just the thing for a special summer dessert with a subtle lemon note.

Lemon tiramisu for 4 people

Lemon curd

200 ml lemon juice
2 tbsp cornstarch
150 g sugar
100 g cold butter
75 g cream
2 tbsp lemon peel

cream

500g mascarpone
200 g whipped cream
75 g sugar

1.5 packs of ladyfingers

Decoration:

fresh lemons, lemon balm

Here's how:

For the curd. Put the lemon juice and starch in a saucepan and stir until cold. Add the sugar and bring everything to the boil and allow it to thicken. Remove from the heat and then stir in the cold butter in pieces. Finally, add the cream and the lemon zest and bring to the boil again briefly, then allow to cool.

For the cream, whip the cream in a tall bowl until stiff. Put the mascarpone in a mixing bowl and stir with the sugar until creamy. Fold in the cream.

Layer half of the ladyfingers in a bowl, cover with plenty of lemon curd and spread half of the cream on top. Layer the ladyfingers, curd and cream again. Finally, decorate with curd, lemon pieces and lemon balm leaves.

Leave in the fridge for at least 3-4 hours, preferably overnight.

Tip: If you like, you can refine the lemon curd with limoncello (amount according to taste) after cooking.
